Keens Cheddar - smooth and firm textured with long, complex, rich, nutty flavours and a tangy bite at the end
   
Sussex Brie - a sweet, supple and full flavoured cheese - if matured for 60 days, upon cutting, the inside cheese will be soft and bulging    
White Lake - made from unpasturised goats milk this is a soft mould ripened hand-made cheese with a mild acidic start giving way to a creamy slightly buttery finish    
Driftwood - goats log from White Lake Cheeses in Somerset. Has a unique citrus flavour, rind is ash covered and it has a silky smooth texture.
   
Isle of Mull Cheddar - Scottish cheddar made from unpasturised, slightly alcoholic milk, pale ivory colour with a very sharp, fruity tang
   
Cashel Blue - Rich, voluptuous textures punctuated with a little spicy lift from the blue
   
Gubbeen - a semi-soft paste with a silky smooth, pliable texture and a fresh, milky and mild buttery nutty accent
