  • For banana cake:

  • 3 bananas
  • 150g brown sugar
  • 190g self raising flour
  • 150ml olive oil
  • 2 eggs
  • 2 tsp. bicarbonate of soda
  • 1 Tsp. ground cumin
  • 1 shot of rum
  • Banana tuile:

  • 100g banana puree
  • 10g insomat

Banana & rum cake

For banana cake:

Bake bananas in the oven with skin on until black.

Place all dry ingredients in a bowl and mix it all together, add wet ingredients with cold banana and whip it until smooth.

Place it in a deep baking tray and bake it for 45 min at 160*C.

Banana tuile:

Bring both ingredients to the boil and dehydrate for 6 hours.


Serve it with toffee ice cream, toffee Chantilly and caramelised banana.
